  • 35g g Thai Green Curry Paste
  • 400 ml Coconut Milk
  • 400 g Rice Noodles
  • 500 g Jackfruit
  • 100 g Green Beans
  • 1 tbsp Palm Sugar
  • 2 tbsp Vegan Fish Sauce or Light Soya Sauce
  • Sweet Thai Basil
  • Red Chili (Mild or Spicy)
  • Fresh Lime
Method
Drain the water from the canned jackfruit and cut into smaller pieces. Young green jackfruit is ideal for this dish.
Trim the ends of green beans and cut them into thirds. Cutting them into thirds ensures they cook evenly and are comfortably bite-sized pieces in the finished curry.
On Med/high heat, fry Thai green curry paste in oil for 1-2 minutes until the paste is loose. You'll know it's ready when the oil begins to separate from the paste and the kitchen fills with fragrance.
Add the thick layer of coconut milk with light soya sauce and palm sugar. Bring to a light boil and simmer for 5 minutes to let the oils rise to the surface. Taste at this point and adjust the soya sauce or palm sugar to get the right balance of sweetness and saltiness before moving on.

Back to the curry - Add green beans and simmer until beans are cooked. They should still retain a little bite, this pleasing texture contrast works beautifully alongside the silky, fragrant curry sauce.
Turn off heat and gently stir in a handful of Sweet Thai basil and extra chilies (if desired). To serve, place a few bundles of noodles in a bowl and pour curry on top with a squeeze of fresh lime juice. Enjoy!
