Mae Jum Khao Soi Paste brings you one of northern Thailand's most distinctive and beloved dishes. Khao soi is a creamy coconut curry noodle soup with a flavor all its own: turmeric and lemongrass form the base, warming spices are layered through, and good coconut milk gives it its richness.
Simmer the paste with coconut milk and stock, then add chicken for classic khao soi gai, or make it with beef, tofu or vegetables. Traditionally, the curry is ladled over egg noodles and topped with crispy fried noodles, pickled mustard greens, cilantro and fresh shallots. For a gluten-free or vegan bowl, swap the egg noodles for rice noodles. Every bowl is bold, creamy and comforting all at once.
Khao soi is a northern classic, but Jum's recipe comes from her family in Trang province, southern Thailand. The herbs are freshly harvested and stone-ground the traditional way, the same method Jum learned from a young age. Nothing added, no shortcuts. Because there's no fish sauce in the paste, you season it your way, with fish sauce, soy sauce or a pinch of salt.

I was born and raised in Thailand, where there was an abundance of herbs, spices, fruits and vegetables growing around my family home. It wasn't in a garden or vegetable plot, it was just here, there and everywhere! From a young age, I was often the one asked to blend the herbs and spices in a stone pestle and mortar, until my arm was about to fall off. I didn't enjoy it, but in hindsight, it taught me all I know..
Today, my family's traditional blend of newly harvested herbs are stone ground to make a fresh paste, which is combined with a mix of whole spices that have been pan roasted to extract the natural oils before being finely ground.
We do not add any sugar, oil, shrimp paste or any artificial preservatives, additives or coloring to our fresh blend which is then mildly pasteurized to retain the natural qualities and goodness so you can enjoy that distinctive aroma of fresh herbs and spices when you open the packet.
Each 2.5 oz pack of Mae Jum curry paste makes about 8 servings — plenty for a family meal or a couple of nights of leftovers (if it lasts that long!). Just add coconut milk, protein, and vegetables of your choice.
Every curry has its own personality! Our spice levels range from 1 to 5, so there's something for everyone — from the gentle warmth of Massaman (1/5), a fiery kick of Red Curry (3/5) or intense heat of a Jungle Curry (5/5).
Check the spice rating on each pack to find your perfect match, and remember: you can always adjust the heat by adding more or less paste to your dish!
To cook the ultimate traditional Thai dish, you may want to add the following ingredients: Fish sauce, palm sugar or shrimp paste.
Although you can still produce a beautiful Thai meal without these extra ingredients from using Mae Jum Thai pastes.
Keep opened packs of paste in fridge, where it'll stay fresh for up to 3-4 weeks.
For longer storage, portion it into an ice cube tray and freeze — that way you'll always have curry paste ready whenever the craving strikes.

I used chicken thighs rather than legs, as i find the leg meat a little tough. This is really easy to make. The recipe is for six people, but I only needed it for two, so i just halved everything, and i have plenty of past left for anothet time. It is really delicious, i think the best one so far. Im sure it would work just as well with rice.

the taste has been amazing! I was just surprised that I had to provide so many ingredients. fish sauce, shrimp paste, etc. also, it comes with 2 meals to one non resealable packet. so if i make a meal, I have to figure out how to save the sauce for the 2nd meal or use it quickly. but, al in all, it is GREAT! I highly recommend it!

This paste has a ton of flavour with just a gentle hint of spice, perfect for all tastes! We made it with chicken drumsticks and served with rice because I'd not read the packet properly before I started cooking! So it was less of a broth and more like deliciously soaked rice and chicken. Excited to try it again with noodles next time.

I have cooked for the family Thai Khao Soi with both turkey meat and chicken both were really good but Turkey was just exceptional as a complimentary meat for the Khao Soi curry paste. I think this might be our favourite as we have tried Red curry , Green Curry , Panang curry twice.

I'm obsessed with these pastes. The flavours are incredible, they're easy to use with clear instructions on the packets and also easy to adapt to personal tastes and preferences.
