Mae Jum Panang Curry Paste makes Thailand's richest curry. Known in Thailand as phanaeng, it's thicker than most and beautifully balanced between the warmth of red chili and the fragrance of lemongrass, makrut lime and galangal. Compared with red curry, panang is richer and a little milder, with a gentle medium heat that suits the whole family.
To cook it, fry the paste in a little coconut cream until fragrant, then add coconut milk and your choice of protein and simmer until the sauce turns thick and glossy. Traditionally, Thai panang curry is finished with roasted peanuts, a swirl of coconut cream and fresh makrut lime leaves. It's one of the most satisfying Thai dishes you can make at home: exceptional as a chicken panang curry, and just as good with shrimp or beef, or with tofu for a vegan version.
Jum's recipe comes from her family in Trang province, southern Thailand. The herbs are freshly harvested and stone-ground the traditional way, the same method Jum learned from a young age. Nothing added, no shortcuts. The paste is registered with the Vegan Society and contains no shrimp paste or fish sauce, so you can season it your way.

I was born and raised in Thailand, where there was an abundance of herbs, spices, fruits and vegetables growing around my family home. It wasn't in a garden or vegetable plot, it was just here, there and everywhere! From a young age, I was often the one asked to blend the herbs and spices in a stone pestle and mortar, until my arm was about to fall off. I didn't enjoy it, but in hindsight, it taught me all I know..
Today, my family's traditional blend of newly harvested herbs are stone ground to make a fresh paste, which is combined with a mix of whole spices that have been pan roasted to extract the natural oils before being finely ground.
We do not add any sugar, oil, shrimp paste or any artificial preservatives, additives or coloring to our fresh blend which is then mildly pasteurized to retain the natural qualities and goodness so you can enjoy that distinctive aroma of fresh herbs and spices when you open the packet.
Each 2.5 oz pack of Mae Jum curry paste makes about 8 servings — plenty for a family meal or a couple of nights of leftovers (if it lasts that long!). Just add coconut milk, protein, and vegetables of your choice.
Every curry has its own personality! Our spice levels range from 1 to 5, so there's something for everyone — from the gentle warmth of Massaman (1/5), a fiery kick of Red Curry (3/5) or intense heat of a Jungle Curry (5/5).
Check the spice rating on each pack to find your perfect match, and remember: you can always adjust the heat by adding more or less paste to your dish!
To cook the ultimate traditional Thai dish, you may want to add the following ingredients: Fish sauce, palm sugar or shrimp paste.
Although you can still produce a beautiful Thai meal without these extra ingredients from using Mae Jum Thai pastes.
Keep opened packs of paste in fridge, where it'll stay fresh for up to 3-4 weeks.
For longer storage, portion it into an ice cube tray and freeze — that way you'll always have curry paste ready whenever the craving strikes.

I've now tried an assortment from both Mythaicurry pastes, and MAE JUM. Honestly, I find they are both delicious. One big difference is that MAE JUM pastes seem to go further for the money, however they encourage adding fish sauce, and shrimp paste to the mix, both of which i found made an otherwise decent chicken curry taste horribly fishy. When I made them without the added shrimp/fish additives, the end product was spot-on for my taste. I've tried their yellow, red & green currys and all are lovely, but a word of warning is that they tend to be quite spicy hot (great for me, less so for my partner). The Panang isn't particularly hot so should suit all. Overall, recommended.

This Panang is my absolute fave Thai curry!
It’s delicious, sweet, creamy, not hot but so tasty.
We get four servings from one pack, so for two of us I use half a packet then freeze the rest. I also use half a tin of coconut milk and freeze the other half of that too so that they’re both there ready to use next time.

It was my first time making a Panang beef curry. It was superb and we will definitely have this again. Very tasty and easy to make.
I love this paste because you get full flavour without the really hot heat which is perfect for me. I get to thoroughly enjoy the Thai flavours and know I'm not running to get a glass of milk!!
