Why does it taste so authentic...

I was born and raised in Thailand, where there was an abundance of herbs, spices, fruits and vegetables growing around my family home. It wasn't in a garden or vegetable plot, it was just here, there and everywhere! From a young age, I was often the one asked to blend the herbs and spices in a stone pestle and mortar, until my arm was about to fall off. I didn't enjoy it, but in hindsight, it taught me all I know.

Today, my family's traditional blend of newly harvested herbs are stone ground to make a fresh paste, which is combined with a mix of whole spices that have been pan roasted to extract the natural oils before being finely ground.

We do not add any sugar, oil, shrimp paste or any artificial preservatives, additives or coloring to our fresh blend which is then mildly pasteurized to retain the natural qualities and goodness so you can enjoy that distinctive aroma of fresh herbs and spices when you open the packet.

How to make a Mae Jum Curry!

Gently fry
the curry paste

Combine with
coconut milk

Add choice of
protein and vegetables

Simmer and
season to taste

Serve with
rice and
enjoy!

Hi Brian, Thank you for your feedback and we have reached out to you via email too. We are sorry if you found our paste too salty, we only put the minimum amount of salt necessary to achieve the correct water activity levels to act as a natural preservative.

The packs is sufficient for 6-8 servings, and the recipe instructions are on the back of the pack reflect the recommended amount of coconut milk ratio to paste.

We've tested the recipes multiple times and it shouldn't be salty, it should be seasoned appropriately if anything, it may come out underseasoned. I'd be very interested to know how you went about preparing your meal so we can learn any lessons from your experience, and perhaps improve the clarity of recipes in the future. 🙏

I purchased both the Bangkok Bundle and the Taster GIFT box. I have been working my way through these pastes and can confidently say they are by far the best Thai pastes I’ve ever tried. Not only are they incredibly delicious and authentic (having visited Thailand myself, I can vouch for the flavour!), but the vibrant colours of the finished dishes are just as eye-catching and enticing as promised in the marketing. Excellent Pad Thai paste, so full of flavour. Have Ben eating “Thai food” for decades (ex military)- why the quotes? because none compare to this. The online recipe was also simple to follow.

I have only used the yellow curry paste so far, used half to make enough for two days. Really impressed with the taste of the sauce, absolutely delicious. Nice and hot which I like and just pure ingredients, no nasties. I would definitely order again.
