I was born and raised in Thailand, where there was an abundance of herbs, spices, fruits and vegetables growing around my family home. It wasn't in a garden or vegetable plot, it was just here, there and everywhere! From a young age, I was often the one asked to blend the herbs and spices in a stone pestle and mortar, until my arm was about to fall off. I didn't enjoy it, but in hindsight, it taught me all I know..
Today, my family's traditional blend of newly harvested herbs are stone ground to make a fresh paste, which is combined with a mix of whole spices that have been pan roasted to extract the natural oils before being finely ground.
We do not add any sugar, oil, shrimp paste or any artificial preservatives, additives or coloring to our fresh blend which is then mildly pasteurized to retain the natural qualities and goodness so you can enjoy that distinctive aroma of fresh herbs and spices when you open the packet.
Each 2.5 oz pack of Mae Jum curry paste makes about 8 servings — plenty for a family meal or a couple of nights of leftovers (if it lasts that long!). Just add coconut milk, protein, and vegetables of your choice.
Every curry has its own personality! Our spice levels range from 1 to 5, so there's something for everyone — from the gentle warmth of Massaman (1/5), a fiery kick of Red Curry (3/5) or intense heat of a Jungle Curry (5/5).
Check the spice rating on each pack to find your perfect match, and remember: you can always adjust the heat by adding more or less paste to your dish!
To cook the ultimate traditional Thai dish, you may want to add the following ingredients: Fish sauce, palm sugar or shrimp paste.
Although you can still produce a beautiful Thai meal without these extra ingredients from using Mae Jum Thai pastes.
Keep opened packs of paste in fridge, where it'll stay fresh for up to 3-4 weeks.
For longer storage, portion it into an ice cube tray and freeze — that way you'll always have curry paste ready whenever the craving strikes.

I’ve used lots of Curry pastes, but hands-down these are the best. I’ve tried the Massaman and yellow curry’s thus far. Everyone said it tasted exactly like a Thai restaurant. I started with the starter pack, and ordered more. Really recommend them.
This is the first time I have tried the Yellow Curry paste as I thought it would be too hot, but it was fine. A little hotter than the others to start with but got used to it and it was lovely. I have to use sweetener rather than sugar as my partner is diabetic, but it works out ok.

This is the first Mae Jim curry paste we've tried. It is part of the taster bundle. We bought in all the ingredients to go with it. Cooked it excitedly, only to discover it is very hot chilli (and I'm a chilli lover) with the other spices hardly tastable past the intense, flavourless heat.
This is really disappointing.
Hopefully the next curry we try will be more flavoursome
Hello Lily, we appreciate your time in providing feedback to us and others. I'm Thai, and chillies used to grow in my garden, so throughout my life, this was a common ingredient at home. Our tolerance is much higher, but what I missed in the UK was something authentic, something close to what I cook for my family. The yellow paste is mild for us, and is a family favourite, at least for us. There are so many types of chillies, used by many different cultures, so liking one type doesn't always equate to enjoying them all. Many restaurants, both in the UK, and in tourist areas of Thailand, adjust their curries to suit the Western palate; this is also the case for some Thai curry paste brands. I just wanted to produce something that didn't compromise on the ingredients and recipes I grew up with, so I am genuinely sorry that you didn't find the enjoyment I hoped you would. The paste is enough for 6-8 servings, so you can use a little less for the Red and Jungle, as these are too hot for you. Don't forget to add some palm sugar, as this is needed for the spice balance. Massaman, Panang and Green should be fine, although back off a little on the Green too. If you use too much, then you will feel the heat more than is intended. If you are not satisfied after trying a few more, then I will refund your purchase. If you are not happy, then neither can I. Jum x
