On the serving sizes, one of the things people are often surprised by is how far a single pack goes. The recipes at the back of the pack (6 or 8 servings) show what you can make using the whole pack at once, but most customers get several meals out of one pack by using half or 1/3 of the pack when cooking. You can use as little or as much as you like and it keeps well in the fridge, so there's no pressure to use it all in one go or worry about leftovers, you are right to say Thai food is best when it is cooked fresh!

We should make this point clearer, and perhaps with a larger text on the packaging would help avoid the assumption that it's a one-use product. 🙏
