Why does it taste so authentic...

I was born and raised in Thailand, where there was an abundance of herbs, spices, fruits and vegetables growing around my family home. It wasn't in a garden or vegetable plot, it was just here, there and everywhere! From a young age, I was often the one asked to blend the herbs and spices in a stone pestle and mortar, until my arm was about to fall off. I didn't enjoy it, but in hindsight, it taught me all I know.

Today, my family's traditional blend of newly harvested herbs are stone ground to make a fresh paste, which is combined with a mix of whole spices that have been pan roasted to extract the natural oils before being finely ground.

We do not add any sugar, oil, shrimp paste or any artificial preservatives, additives or coloring to our fresh blend which is then mildly pasteurized to retain the natural qualities and goodness so you can enjoy that distinctive aroma of fresh herbs and spices when you open the packet.

How to make a Mae Jum Curry!

Gently fry

I did not know what to expect with this paste, but when I tasted the cooked meal, it was just so unusual, aromatic and simply gorgeous. Will buy again and again!

Disapppointed.

As I was only cooking for two of us, I used half the quantity of ingredients, but the whole paste packet.

Unfortunately it didn't taste of anything at all, so we weren't able to eat more than a couple of mouthfuls before binning it.

Hopefully the other pastes I bought at the same time will be better. I'll use the whole pack with ingredients for 2 servings going forward, and keep everything crossed it's not another failure!

You need a lot of extra ingredients to make these, like palm sugar, shrimp paste and fish sauce, which I don’t have in my cupboards at home. If you do, you might as well make this dish from scratch

Thank you for your comment. Our pastes are unashamedly a blend of natural fresh herbs and spices in the right proportions and quantities for the chosen curry. We also only add enough salt to act as a natural preservative, but not so much as is needed for the whole dish, as this will depend on what else you add in terms of protein and vegetables. Palm sugar is the sweet element and can be replace by normal sugar, and fish sauce/shrimp paste is the salty element that can be replaced by just salt. Our pastes address the most complex part of the dish and that is the right balance of herbs and spices, it leaves the balance of sugar and salt to the home cook. If not adding sugar or salt means you might as well make it from scratch, then we do have a blog on our website to help you with this.

Really great tasting paste

Really great tasting paste, perfect for a good pad thai. I used the guide on the back and substituted the fish sauce for soy, and the prawns for more tofu. Love this paste, no spicy kick at all.

Easy, quick and delicious: the family love the meals we make with these pastes. I'm even more delighted that they don't have sugar in them - it's up to the chef how much to add. I avoid/limit added sugar because it's so bad for you, in so many ways.

Thailand in a packet

I have to say the delivery was excellent and the product was beautifully packaged. I followed the instructions which were clearly laid out on reverse of chosen paste packets , I decided to add my preferred protein, the aromas from the paste took me back to Thailand and after adding all my other ingredients both myself and partner were trilled with how good the paste was very authentic excellent. The paste is on a different level compared to the average shop brought in those large supermarkets. I would definitely recommend these , so go and try for yourself! You won’t regret it x

Thai Green Curry with king prawns

Used Maejum green paste for the first time tonight. Wow, easy and delicious.
Used 35gms of paste for the 2 of us, so enough for another meal.

This curry paste is fantastic really deep spice flavour that wakes up your taste buds I would recommend it to anyone who loves Thai food I will deep be ordering some more 😋

Pad Thai pretty average

I thought I’d give Pad Thai a go as it’s new to me, but found it very average. Unfortunately I bought 3 packs so bit of a waste. I couldn’t find any recipes on Maejum website which was another let down. I will stick to the Penang, Thai Green, Jungle as they have far more flavour. I wont be buying Pad Thai again. 🙁
